In catholic Italy, we didn't use to celebrate Halloween, but over the last decade it has become more and more popular. For Italians there is no particular meaning behind Halloween - it is just another occasion "per fare festa" (to party)!
What we've always celebrated instead is Ognissanti (All Saints' Day), which follows Halloween and is a public holiday. The following day is important too as it's Il Giorno dei Morti (The Day of the Dead), when people visit their family graves. On this day, in the South of Italy, they bake small cookies called "ossa dei morti" (click here for the recipe).
